So simple ingredients but so delicious. It's all about the art of moisture to make the flour turn into the texture of sponge cake.
Cooking Instructions

Mix rice flours and sugar in a mixing bowl.

Slowly adding water, 1 tsp at a time to moist the rice flour until you squeeze the flour it forms a shape but can easily break down into snow flakes. Cover and allow it to rest at least 4 hours before steam.

Add 1/8 cup after soak. Ideally it is better to sift through a 20 eye mesh but can be skipped. Steam on high heat for 30-35 minutes. Serve warm.

Because the glutinous rice flour somehow absorb a lot of moisture otherwise the cake will get harden the next day. This is steamed rice cake or popular as Chwee kueh, with preserved turnip and pickled mustard topping, chili sauce and toasted sesame seeds. It is a very popular dish in Singapore as favorite breakfast or snack item. Usually I make these chwee kueh for our lunch. The texture is really nice, smooth and very light.Those that are sold at hawker centers usually do not add sweet pickled mustard in their topping. But I found it too salty if I use only persevered radish.
