Palak / Spinach Rice

Blanch Palak, assemble all ingredients

Take already cooked rice,

Make paste of blanched Palak along with green chilli + ginger + 2-3 tbsp water and keep aside.

In pan add oil, add cumin, bay leaf, cardamom, dry red chilli, let them crackle for few seconds, then add garlic and sauté till light golden brown.
Add onion and sauté till golden brown. - 5
Then add spinach paste + slight water and cook for 2-3 minutes till the rawness from leaves goes off.

Gradually water evaporates and mixture thickens.

Add salt + garam masala powder + coriander powder + sugar and sauté for another 2-3 minutes. Add Rice and mix gently. Cook for 3-4 minutes till rice is mixed well with Palak mixture, add lemon juice and mix well.

Cover and cook for around 2 minutes under low to medium flame, switch off flame and keep in stand by mode for 2-3 minutes.
Dish is done. - 9
Serve flavourful Palak rice with Raita or Tomato Chutney.

Pair with salad for a healthy meal.
