This is a rustic dish from my hometown, similar to a simple noodle soup, but with a rich and refreshing flavor.

Simmer the pork spare ribs until tender. Add the crab claws and cook until they turn red, then remove them. Season the broth to taste. Crack the egg into the ground pork, add a little bouillon powder and pepper, and mix well. Gently pour this mixture into the simmering broth. When the meat floats to the surface, gently stir to avoid breaking up the meat and egg. Next, add chopped celery and tomatoes, then add the fried tofu and the white parts of the green onions.

Place cooked rice noodles in a bowl. Ladle the hot broth over the noodles, then arrange the tofu, ribs, crab, and pork mixture on top. Finish with dill. Serve with fresh herbs, lime, and chili on the side.
