I love Korean toast, but the reality is that for a perpetual dieter like me, the sugar and oil in them is an issue. In South Korea the toast is becoming healthier every year due to the the increasing popularity of a healthy lifestyle.
I'm sorry the recipe name is so exaggerated. I wanted to commemorate the visit to Japan by South Korean President Lee Myung-bak with something that I thought he might have liked when he used to be a regular salaryman.
The ketchup and mayonnaise make this sandwich tasty enough, so you can skip the margarine if you like. I put some cheese in, but the sandwich is also great with tuna or ham. You can also just add some raw shredded vegetables instead of mixing them in. I think this sandwich is more authentic if you use a regular inexpensive sliced sandwich bread rather than a fancy expensive one.

Cooking Instructions

Finely shred the cabbage and carrot. Beat the egg and add the shredded vegetables to it. Rip up the cheese and add to the egg mixture. Season with salt and pepper.

Toast the bread.

Heat some oil in a frying pan. Add the egg mixture from step 1 and pan fry over low-medium heat. When it's lightly browned turn it over. Press down to make a thin omelette.

Spread the bread thinly with margarine (optional) and top with the omelette. Add the ham slice, ketchup and mayonnaise. Put the other piece of bread on top and it's done.

Use a tamagoyaki pan to make the omelette. If you make the omelette using about 2/3rd of the pan, it's the perfect size for the bread!

I highly recommend having this with soy milk.

I ordered an omelette for breakfast at a hotel, and put it between two slices of bread for an instant Korean toast. Give it try when you're out for breakfast.

I seem to be on a shrimpy roll here. Lol! To be honest, I never like shrimps until I learned how to prepare them properly. Most eateries will cook the shrimps with shells on. Having shells on means deveining is not done and will lead to "seafoody" smell, which is a major turn off for me. Seafood needs to be fresh and be prepped properly to take away the "seafoody" smell. Ever since I had learned the trick of prepping shrimps properly, I began falling in love with them.This is also the very 1st recipe I had made with shrimps. I had made this shrimp toast quite some time ago and didn't really have the chance to show you lovely people. I guess now is the time. Cos one of my goals for 2019 is to revitalize some of my old recipes. I didn't process the shrimps until it becomes a mousse. Instead, I chopped them up into fine coarse with a cleaver. That way, I get bites of shrimps chunks. You can of cos choose whichever kinda texture as desired.The trick in making a great shrimp toast is to use a very soft white sandwich bread. Brioche or any eggy rich bread will not work. I find that Japanese white bread produces the best results. As you can see from the photos, I dunked my shrimp toast with a mixture of white and black sesame seeds. The sesame seeds do add another layer of aromatics. Usually, these toasts are being cut into triangles, but I find that cutting them in squares make a better plating. Don't you agree? Anyway, I hope you will give this recipe a try. Daniel Lim -
