I wanted to eat good meat outdoors. That's how I managed to put this recipe together.

Note: The ratio is 1 kg meat to 1 tablespoon salt. Don't touch the meat until it turns white when grilling. If you poke them around, the tasty meat juice will run off. For 4 servings. Recipe by chi-bo-3

Grilled Salted Pork

Ingredients

4 servings
  1. 500 gramsPork shoulder (block)
  2. 1/2 tbspCoarse salt
  3. 2 tspGrated garlic
  4. 1Japanese leek
  5. 1 pinchBlack pepper
  6. 1 dashSoy sauce

Cooking Instructions

    With a paper towel, pat dry any excess water from the pork. Rub in the salt and garlic evenly.

    Wrap with plastic wrap (2 layers). Put that into a plastic bag, press the air out, and close it up tightly. Brine in the fridge for 3 days.

    Slice the pork into 5 mm. In a pan over medium heat, grill one side until it turns white. Do not use oil. Grill the other side briefly.

    Remove the cooked meat. Chop the leek diagonally, and stir-fry in the same frying pan. Season with black pepper and soy sauce. Serve with the meat.
