Polish Cabbage Soup (Kapusniak)
Hearty winter soup, everything but the kitchen sink. Good for a hangover.
Cooking Instructions

Assemble all of your ingredients.

Chop and prep all of your veg for mise en place.

Melt the butter in a large soup or stock pan over high heat, add the bratwurst meat (decased) and ground chuck, break up with the spoon, and sautee till it gets a little brown. Around 3-5 minutes

Add onions, poblano, carrots, and potato. Sweat these ingredients with the meat another 3 minutes or so.

Add cabbage and sauerkraut, sweat the cabbage and stir vigorously about 5 minutes.

Add tomatoes, tomato juice, beef stock, water, salt and pepper, and herb and spices.

Bring to a rolling boil, and lower to a gentle bubbling simmer. Cover and cook for 2 to 2 1/2 hours, stirring occasionally.

I haven't made this in a long time, but I have fond memories of eating it in the Polish-American kitchens of my childhood. The recipe calls for duck blood, but since it is almost impossible today to get duck’s blood and it is a turn off for most people (even though it just adds flavor and richness), this recipe does not include duck’s blood. This soup is meant to be served with Polish "Raw" Potato Dumplings. I have included a recipe for these dumplings here on Cookpad. The picture above is of the broth. At my grandmother’s home in Detroit, our Lenten fast was broken with a traditional Polish Easter soup (Biały Barszcz)—bowls filled to the brim with smoked meats, eggs, cheese, and rye bread, ladled over the top with a tangy white broth made from the cooking of the Easter kielbasa.In Poland, this soup is served on the Monday after Easter to finish the leftovers. This recipe makes easy work of traditional cabbage rolls. I tried yo make this in my 6 qt pressure cooker, but realized I didn't have enough room, and moved it to a regular soup pot (8 qt), but I bet a 6 qt dutch oven would work too since you can fill it more than a pressure cooker. My first day at kindergarten; I do not remember getting on the big, yellow, school bus to go home. I only remember being put on a bus. Someone put a tag on my chest that let everyone know which bus I was to take home. They put me on the wrong bus. I was only five—what did I know? I only remembered my address: “10964 McKean Road.” Everyone had been delivered safely home. I was the only one left on the bus. The bus driver asked me where did I live? I answered “10964 McKean Road.” “Show me your address!” She checked my tag and said. “You are on the wrong bus!” Makes no difference, I knew my address “10964 McKean Road.” The bus driver headed for McKean Road, I recognized my house and got off. My mother was frantic. I was over an hour late getting home. “What happened? Why are you so late?” I had no idea. I sprawled out on the dining room floor and “read” the comic section of the newspaper. My mother brought me a bowl of chicken soup. I ate it on the floor. I was oblivious to my mother’s questions. I just enjoyed my soup.Chicken soup was a staple at our home when I was growing up. At weddings a fancy version was served which was very clear and contained very fine Polish kluski, or noodles. I have since learned that the Poles do not call what we know as noodles, kluski, but reserve the word for dumplings. But in our house, all noodles were kluski. My version is the one my mother made, with lots of vegetables that grew on the farm. Adam Janowski
