Preheat the oven to 350 F. Butter and flour a 12 cup bundt pan. Sift the first 4 ingredients together. Using a stand mixer, beat the sugar and butter until well blended. Beat in the eggs. Add the dry mixture and stir until just combined. Stir in the carrots and add the lemon juice and zest.

Bake in the bundt pan ~40 minutes, until a toothpick inserted at the center comes out clean. Cool for 15 minute in the pan. Remove from the pan and serve warm.
