Easy Dandan Noodles with Shirataki for Dieters

I want to eat dandan noodles everyday.
Normal Chinese noodles are high in calories, so I created this dandan noodle recipe with shirataki, which you can easily cook at home.

I boiled the add-ons separately during Step 3, but if it's too much trouble, you can boil them with the soup at Step 4.
In that case, simmer the shirataki noodles until the smell dissipates.
I've tried many restaurants, and I have lots of ingredients that I want to experiment with, but I made a basic soup this time. For 2 servings. Recipe by milestone

Ingredients

2 servings
  • Meat miso:
  • 1Sesame oil
  • 2 cloveGarlic
  • 2thumbs Ginger
  • 140 gramsGround pork (ground chicken makes it lighter)
  • 1○Japanese leek
  • 2 tsp○Doubanjiang
  • 2 tsp○Shaoxing wine (or sake)
  • Soup:
  • 2 1/2 cup●Hot water
  • 2 tsp● Chinese soup stock
  • 3 tbsp●Tahini (or sesame paste)
  • 2 tsp●Vinegar
  • 2 tsp●Soy sauce
  • 3 tbsp●Ground sesame seeds
  • 2 tbsp●Ra-yu with Sichuan pepper (or regular ra-yu)
  • 1●Black pepper
  • Add-ons
  • 2bags Shirataki noodles
  • 1 bagBean sprouts
  • 2 headBok choy

Steps

  1. 1

    Meat miso: Pour sesame oil in a pot, and stir-fry the minced garlic and ginger. When fragrant, add ground meat, and continue stir-frying.

    Meat miso: When the meat is cooked through, add the ○ minced Japanese leek, Shaoxing wine, doubanjiang, and stir-fry some more. Transfer to a plate.

    Add-ons: Boil the bok choy and set aside on a plate. Chop the shirataki noodles evenly into 3 portions and boil for 2-3 minutes.

    Soup & Add-ons: Put the ● ingredients in a pot, and turn on the heat. When it starts to boil, add the shirataki noodles. When the noodles have absorbed the flavour, add the bean sprouts.

    Serve the soup and add-ons from Step 4 into a bowl, put the meat from Step 2, and bok choy from Step 3 on top, then it's done.

    Here's a variation: Cookpad user "atchin" substituted the ground meat with koya freeze-fried tofu. This'll be good for people who are on macrobiotic diet!
