Refreshing Salted Chicken Thighs

I got tired seasoning my chicken with soy sauce, so I used salt instead.
You need at least 30 minutes for marinating.
If you can, leave it to marinade overnight. By doing so, it will allow the marinade to soak into the meat more thoroughly and the result will taste much better. Recipe by umemodoki

Cooking Instructions
- 1
Pour all ★ marinade ingredients into a plastic bag. Add in the chicken and rub the marinade into it. Let it sit for at least 30 minutes. It's even better if you leave it overnight in the fridge.
- 2
Heat oil in a pan, pour in the chicken including all the marinade. Cook both sides over medium heat, reduce the heat to low, cover with a lid, and cook thoroughly.
- 3
Serve on a plate and add garnishes on the side.

*For people who found this recipe a bit too salty, I changed the amount of salt from 1/2 teaspoon to around 1/3 teaspoon. Feel free to adjust the seasoning according to your taste.

Mexican-Style Sautéed Chicken Thighs Mexican-Style Sautéed Chicken Thighs
This recipe is based on Chef Susan Feniger and Mary Sue Milliken's dish,"Pollo Ciudad," served a The Border Grill restaurant in Los Angeles. I added the step of marinating the chicken to get rid of the gamey odor. The key is to cook the chicken skin really well. If you wipe off the excess fat that comes out with a paper towel, the skin will come out nice and crisp. I used fairly big chicken thighs here, but cook smaller pieces of meat for less time. I was looking for a tasty way to cook chicken skin, and found an interesting recipe in the ANA in-flight magazine which I used as the basis for this recipe. You just need to weigh down the meat, and cook slowly over low heat. One trick is to blot up the excess liquid and fat that comes out. If you don't, the skin won't crisp up. Recipe by u-kumico cookpad.japan -

I seasoned juicy chicken thighs with ginger and vinegar to make a light dish. The "Jukumi" vinegar, for which I was chosen as a cooking tester, goes especially well with meat dishes. If you coat the accompanying vegetables in the sauce, you'll be able to gobble them up.You can use grated ginger from a tube.Since you coat the chicken with katakuriko potato starch flour in a plastic bag, your hands won't get dirty. If won't need oil if you have a non-stick or Teflon pan.
