Ingredients

  • For The Bread
  • 2 cupall-purpose flour
  • 1 tbspactive dry yeast
  • 1 tbspsugar
  • 1 tspsalt
  • 2-3 tbspbutter
  • 1/2 cupwarm water
  • 3 tbspwater
  • For The Stuffing
  • 1/2 cupdessicated or freshly grated coconut
  • 1/4 cuptutti frutti
  • 4tabsp powdered sugar
  • 15crushed almonds
  • 13crushed cashews
  • 1 tspgreen cardamom Powder
  • 2 tbspcold milk

  1. 1

    First thing is to activate the yeast for that warm the water add yeast and sugar to it. Stir it until it dissolves and all the lumps are gone. Then cover it and keep it aside for 10 minutes. Make sure the water is warm neither cold nor hot else the yeast will not activate. You can use also use fresh yeast or dry yeast in place of active dry yeast. After activation it will be more than double in size with lots of bubbles in it. That's the proof that it's perfectly activated.

    Now take a big bowl and seive the flour in it. Then add salt and mix well. Now add the activated yeast mixture and mix it very well by hands. Then add little butter at a time and start kneading it luke a dough. When everything is combined and form like a dough transfer it to the working surface and start kneading it back and forth. Knead it by stretch and fold method for a good 12-14 minutes just like we knead other bread dough. I added 3 tbsp water to the dough to make it more soft.

    As you will knead it you will notice it's not sticking to your hand nor it's sticking to the surface. To test it's doneness insert your finger in the dough if it comes out clean it's perfectly done. The other method is window testing in this method we have to take a small portion of the dough and stretch it from all sides if it won't tear it's done. Now add little oil in a bowl just to grease it and keep the dough in it and cover it with a cling wrap making sure no air goes inside.

    Then cover it with a kitchen towel and keep it in a warm place to rise. It will take 1 hour to 1 1/2 hour to rise depending on the weather condition. Meanwhile let's prepare the filling for that in a bowl add all the above-mentioned ingredients and mix well. Then add the milk and mix again to give the stuffing a crumbly texture by this it will be easy to stuff in the bread. You can add more or less sugar depending on your taste. You can add chopped wallnuts or pistachios or any other dryfruits.

    Keep the mixture aside and let's check out dough. It's well proof. Now punch it down to remove all the air and knead it for 2 more minutes. Then make a ball of it and cut it into 2 equal portions. Make 2 balls of it cover one ball and start rolling the second one. You can flatten it by hand also. Make a disc out of it either by hand or rolling pin. Then add half of the filling to the disc and cover it from all sides just like we do while making stuffed paratha. Then gently pat it and roll it.

    To give a bun like round or oval shape. Like so make the other one too. Now line a baking tray with parchment paper and place both the buns or bread on it to proof it for second time. Meanwhile preheat the oven at 180°C for 15-20 minutes. After 20 minutes milk wash the buns or breads and bake it at 180°C for 25-30 minutes. After that take it out from the oven transfer it on a cooling rack then grease it with butter and cover it for 10 minutes. Then cut it into pieces and enjoy the dilpasand.
