It looks so much more festive if you add lettuce and tomato.
Use inexpensive breast meat and whatever veggies you have on hand.
It's good for guests too....
Please also trywhere I use this same sweet-salty sauce plus vinegar for a sweet-salty rice kabocha squash dish.

When you are mixing the ingredients with the sauce, turn the heat down and toss lightly, or the sauce will reduce too much.
It's delicious with a red chili pepper to make it hot and spicy too!
I used red pepper this time, but you can use green pepper too since it's deep fried and will become delicious anyway!

Ingredients

4 servings
  1. 1Chicken breast (or thigh meat)
  2. 2to 4 Potatoes
  3. 2to 4 Red or green bell pepper
  4. 1Katakuriko
  5. 3 tbspA) Soy sauce
  6. 3 tbspA) Mirin
  7. 3 tbspA) Sake
  8. 2 tbspA) Sugar

Cooking Instructions

    Cut the chicken on the diagonal into bite-sized dishes. Cut up the potatoes and peppers to about the same size. I used some asparagus this time too.

    Coat everything in Step 1 with katakuriko. Everything will be coated with sauce later, so there's no need to season at this stage.

    Deep fry everything until crispy.

  4. 4

    Mix the A ingredients together (soy sauce, mirin, sake, sugar).

  5. 5

    Pour the combined sauce to a frying pan and bring to a boil. Add the well drained fried ingredients and toss well to coat with the sauce. Done!

    Use any vegetables you like! Use up the leftover veggies in the fridge - or try any combination you like. I recommend kabocha squash, sweet potatoes and eggplant.

    The fried potatoes are a definite must as well.

    Your stir fry is done!
