  2. 1/2onion
  3. 1carrot
  4. 1fresh chorizo
  5. 1medium potato
  6. 1/2 cupwhite wine
  7. Tomato sauce
  8. 1bay leaf
  9. Salt
  10. Olive oil
  11. Water or beef broth

    Chop the onion and carrot, and cut the chorizo into pieces.

    Sauté the carrot in a little oil first since it's the hardest, followed by the onion. Once the onion is softened, add the chorizo and sauté a bit more.

    When everything is sautéed, add the wine and let it reduce.

    Once reduced, add the tomato sauce and chopped potato. Sauté again, then add the lentils and sauté once more. Cover the lentils with water, add the bay leaf and salt.
