Jowar khichu (Sorghum flour Khichu)

Khichu or papdi no lot is famous street food of Gujarat. It is made from rice flour. Though rice flour khichu is popular, we can prepare khichu from various flours too.This soft and spicy steamed delicacy is speciality of Patel community. Hot hot Khichu tastes best with ground nut oil, red chilli powder, pickle masala and garlic chutney.
Today I have preoared khichu from Jowar/sorghum flour. This my so favourite dish.

In a pan, add 2 cups water, cumin seeds, carom seeds, green chillies, cooking soda and salt and let it boil.Once it starts boiling, let it boil for 2-3 minutes and add oil.

Now turn the flame on low and add flour little by little, while stirring with rolling pin, continuously so no lumps are formed.

Once it mixes properly turn off the flame.Now steam cook it for 10 minutes too. Then remove from the cooker and mix well.

Serve hot with oil and pickle masala.
