I prefer to use konjac rice as cauiflower rice gaves me gas
I have been eating cauliflower rice since I started keto 3 years ago..
Feel free to use caulliflower rice but make sure cauliflower is dried thoroughlly
But further ingredients need to be add

Cooking Instructions

Rice base
Mix the vinegar,salt and eryhtritol together and set aside
While shirataki rice is hot, add in the mixture above and stir well.
Transfer the rice mixture into a baking dish

On top of that rice,sprinkled furikake or crushed toasted seaweeed until it cover the rice

Spread the filling
And make sure its evenly distributed.Sprinkle some lefttover cubed cucumber,cubed avocado..if any
You can drizzle sriracha or the mayonnaise if you want..I didnt.

Bake at 200degrees celcius for 20 minute

Serve with seaweed and enjoy !

This recipe was handed down to me by my mother. If you make sushi vinegar to stock, as long as the sugar and salt have dissolved there's no need to let it rest for a day. If making the sushi vinegar on the spot for one batch of sushi rice (3 rice cooker cups' worth) you need 80 ml of rice vinegar, 2 to 3 tablespoons of sugar and 1 teaspoon of salt.
