Ingredients

  1. 2 cupsSemi Pearled Farro
  2. 2sweet peppers 🌶️
  3. 1-2green onions
  4. stalkFresh asparagus - tips, and top of
  5. 1/3 cuphoney mustard vinaigrette, see the one I recommend
  6. 1 tbspfresh lemon juice
  7. 2 tbspbalsamic vinegar
  8. 1 tbspolive oil flavored, lemon 🍋 or blood orange
  9. 3 pinchsea salt- pink
  10. 2pinch’s black pepper
  11. 2 tbspItalian dry seasoning

Cooking Instructions

    Boil the Farro - 1cup of water, add Farro once boiling- 2 cups. Put lid on, turn to a simmer for 20 minutes until water is absorbed but rice is also softer not chewy.. if it’s not soft but water is dry add a bit more. You want water to evaporate but need rice Farro softer.

    Drain water- add Farro into a bowl

    Chop up 🌶️, dice. Add asparagus, Italian seasoning.add honey mustard vinaigrette, salt and pepper and green onions.. mix in Farro add lemon 🍋 juice

    Cover and let chill in fridge 60 minutes
