Puree steamed purple sweet potato with coconut milk until smooth. Set aside. In a mix bowl, add eggs, evaporated milk, sweetened condensed milk, salt and cornstarch. Whisk well. Then strain into a small pot, add the blended and whole together. Bring to a simmer in a large pot of boiling water. Continue stirring until thickened. Lift and stir until cool. Ready to serve 🥰
