As always, I end up with a lot of egg whites after making homemade ice cream. Here’s a chocolate mousse made only with egg whites, no yolks needed.

As always, I end up with a lot of egg whites after making homemade ice cream. Here’s a chocolate mousse made only with egg whites, no yolks needed.

Start by beating the egg whites in a stand mixer or a large bowl with an electric mixer. Whip until they start to foam, then gradually add the sugar. Continue beating until stiff peaks form and the meringue is glossy. Set aside in a bowl.

Melt the chocolate and butter together in a double boiler. Add a splash of milk if needed to make the chocolate smooth and shiny.

Gently fold the melted chocolate into the egg whites. Use a flexible spatula to carefully combine, being careful not to deflate the egg whites. Do not overmix. Spoon the mousse into small serving glasses or bowls.

Decorate as you like. Here, fresh strawberries and cherries were used, along with a sprinkle of white chocolate and crushed speculoos cookies.
