Ingredients

Serves 6 servings
  1. 7 oz (200 g)bittersweet baking chocolate
  2. 5large egg whites (about 5 oz or 150 g)
  3. 1/4 cupgranulated sugar (about 2 oz or 60 g)
  4. 1 1/2 tablespoonsunsalted butter (about 3/4 oz or 20 g)
  5. 1 splashmilk to loosen the chocolate if needed

    Start by beating the egg whites in a stand mixer or a large bowl with an electric mixer. Whip until they start to foam, then gradually add the sugar. Continue beating until stiff peaks form and the meringue is glossy. Set aside in a bowl.

    Melt the chocolate and butter together in a double boiler. Add a splash of milk if needed to make the chocolate smooth and shiny.

    Gently fold the melted chocolate into the egg whites. Use a flexible spatula to carefully combine, being careful not to deflate the egg whites. Do not overmix. Spoon the mousse into small serving glasses or bowls.

    Decorate as you like. Here, fresh strawberries and cherries were used, along with a sprinkle of white chocolate and crushed speculoos cookies.
