Linguine with Cremini Mushrooms and Fresh Cherry Tomatoes

Wash and trim the fresh cherry tomatoes, cut them in half, and set aside.

Clean the cremini mushrooms with a knife to remove any dirt, then wipe with a damp cloth to remove any remaining soil. Slice and set aside.

In a skillet, heat olive oil and finely chopped garlic. Sauté until fragrant, then add the cremini mushrooms. Season with salt, black pepper, finely chopped parsley, and ground ginger. Cook for about 10 minutes.

Pour in the cognac, let it evaporate, then add the cherry tomatoes. Adjust salt to taste and cook for about 10 more minutes.

Cook the linguine until al dente, then add them to the skillet with the mushrooms. Add a little pasta cooking water and butter, and toss to combine.

Plate and serve topped with finely chopped parsley and black pepper.
