Bamboo Shoots are a popular ingredient in Asian cuisines. They need to be boiled or fermented for use. There are many varieties that are used for cooking that are sweet and juicy. But there are some that are bitter. It is always recommended to cook Bamboo shoots. They should not be eaten raw. And for people who cannot get fresh one's, it is but natural to go for canned varieties. The cooking time also gets reduced.
As far as health benefits are concerned, they are rich in Vitamins like A, C, B6, Thiamine etc. Also rich in many Minerals like Magnesium, Copper, Potassium, Manganese, Zinc and Phosphorus. They help us improve our immunity levels. They also help with Cholesterol and Blood Sugar. These and many more such benefits can be reaped from this amazing Shoot.
This time I opted for a simple stir fry for my Suhoor today as it's the Month of Muharram. I totally relished this with simple homemade Rotis and some Cucumber Salad.

First of all, drain all the liquid from the can. Now rinse it under running water for a good 4 times. And wash it for the last and the fifth time with some clean drinking water. Allow it to drain in a colander.

Meanwhile heat oil on a low. Add the yellow mustard seeds. After they crackle, also add dry red chillies and a little of coriander leaves too. And then finally add the bamboo shoots.

Stir fry them for a few minutes with the ingredients as listed until crisp and done. It doesn't take much time as it's canned. You can use any other vegetable like potato to go with it. But I prefer it on it's own.

Serve it immediately with freshly done homemade rotis or chapatis. Or it can be relished in a wrap or a sandwich too. Yum!
