An Odisha/Bengal special recipe of Arbi in rich mustard gravy with slight tangy flavour, goes very well with plain rice.

An Odisha/Bengal special recipe of Arbi in rich mustard gravy with slight tangy flavour, goes very well with plain rice.
Steps

Wash and boil the Arbis for 2 whistles. Remove the skin, cut into cubes, keep aside.

Soak the ingredients under mustard paste for half an hour. Grind to a smooth paste.

Heat mustard oil, temper with panch phoron, curry leaves, red chilli and hing.

Add the mustard paste, boiled and chops Arbis, salt and turmeric.
Mix well, cook for few minutes by stirring frequently, add 1/2 cup water with a small piece of Ambula. You can skip the Ambula, in that case to maintain the tangy-ness add some more tomato. - 5
Keep the gravy as per desired consistency, tastes great with slightly thick gravy. Garnish with chopped coriander leaves. Drizzle few drops of mustard oil on top and keep covered for few minutes before serving.
