Ingredients

  • 1 cupfoxtail millet
  • 1onion
  • 1/4 cupchopped carrot
  • 1/4 cupchopped beans
  • 1/4 cupsgreen peas
  • 1tomato chopped
  • 2 tbspoil
  • 2spring curry leaves
  • 1/2 tspeach mustard seeds, split chickpeas, split black gram
  • 2green chilli
  • 1/2 inchginger grated
  • 1/2 tspsalt
  • Pinchturmeric
  • 1 tsplemon juice
  • 2 tspchopped coriander leaves

Steps

  1. 1

    Soak the millet in sufficient water for 15/20 minutes. Drain and keep aside. Don’t skip soaking, as it would increase the cooking time.

    Chop the veggies of your choice. I have used carrots, beans, tomato and peas. You can use corn, beet root, cauliflower etc. Avoid adding capsicum as it will be overcooked by the time Upma is cooked.

    Heat oil, temper with mustard seeds, split chickpeas and black lentils. Once crackles, add onion, green chilli, grated ginger and curry leaves.

    Now goes in the chopped veggies and salt, turmeric. Fry for few minutes before adding the millet. Mix well and fry another couple of minutes.

    Heat 4 cups water separately and add in to the Upma pan. Cook covered in low medium flame until Upma is ready. Easily takes 20 minutes.

    After turning off the heat, sprinkle lemon juice and coriander leaves. Serve with your choice of sides like any chutney/ketchup.
