Ingredients

40 minutes
3-4 serves
  • 1/2 cupsoaked & boiled with salt black gram (kale chane)
  • 150 gmscleaned, peeled, cut into cubes & steamed elephant Yam / suran
  • For Elephant Yam / Suran Mixture :👇
  • 1t.sp clarified butter
  • 1t.sp oil
  • 1t.sp cumin seeds
  • 1 pinchasafoetida
  • 1/2 cuponion, chopped
  • 1 pinchturmeric powder
  • 1/4t.sp red chilli pwd
  • 1tb. sp ginger-garlic paste
  • 1/2t.sp roasted cumin seed powder
  • Little salt
  • For Black Gram Mixture : 👇
  • 1/2 cupovernight soaked & boiled black gram with salt
  • 2-3t.sp coriander
  • 5-6mint leaves
  • 1Spicy green chilli, finely chopped
  • 1mild -spicy green chilli, finely chopped
  • Salt to taste
  • Other ingredients : 👇
  • 1/4 cupfresh bread crumbs
  • 2-3t.sp corn flour
  • 1/2t.sp chat masala + for sprinkling on kebaabs
  • For roasting :👇
  • 3 tbsp oil
  • 3 tbsp clarified butter
  • Coriander-curd dip : 👇
  • 1 cup chopped coriander
  • 1/4 cupmint leaves
  • 1/4 cupraw peanuts
  • 1 pcginger
  • 5-6garlic
  • 2green chillies
  • 1/4t.sp pepper pwd
  • 1/2t.sp chat masala
  • 1/4t.sp roasted cumin seed powder
  • Juice of 1/2 a lemon
  • 1/2 cupfresh curds
  • Salt to taste
  • To serve : lachcha pyaaz, coriander -curd dip & tomato ketchup

Steps

40 minutes
  1. 1

    Take ghee & oil in a pan. Add cumin seeds & saute well Add onions & saute till onion water is burnt off. Add ginger-garlic paste, roasted cumin seeds powder, red chilli powder, garam masala & salt. Mix well & switch off the gas immediately so the spices do not get burnt.Remove in a bowl.

    Keep boiled black gram & steamed suran separetely. Add mashed suran in the onion mixture.

    Now take boiled black gram in a mixer jar. Add chopped coriander, mint leaves, spicy green chilli & mild spicy green chilli.Crush to fine paste without using any water. Add this paste in Suran mixture.Mix well.

    Mix Suran & Black Gram Mixtures very well. Add fresh bread crumbs, corn flour & chat masala, mix to make a dough like consistency. Make equal size balls.

    Shape them into flat round kebabs. Heat a non-stick pan. Add oil & ghee. Shallow fry kebabs till crispy on both sides.

    Sprinkle chat masala on the kebabs on both the sides. Serve kebabs with lachcha pyaaz & coriander-curd dip.

  7. 7

    Coriander- curd dip : Take all the ingredients in a smaa mixer jar except for the curds & make a smooth paste. Now add curds & crush again. The curds should be little thick & not watery at all. Take the dip in a small bowl.

    Kebaab Platter : Line the plate with kebaabs, put coriander & curd dip on it & a small dot of tomato ketchup. Put lachcha pyaaz in the plate. Serve these flavourful kebabs to your guests & loved ones & let them enjoy the festive days with great jubilance.
