Take ghee & oil in a pan. Add cumin seeds & saute well Add onions & saute till onion water is burnt off. Add ginger-garlic paste, roasted cumin seeds powder, red chilli powder, garam masala & salt. Mix well & switch off the gas immediately so the spices do not get burnt.Remove in a bowl.

Keep boiled black gram & steamed suran separetely. Add mashed suran in the onion mixture.

Now take boiled black gram in a mixer jar. Add chopped coriander, mint leaves, spicy green chilli & mild spicy green chilli.Crush to fine paste without using any water. Add this paste in Suran mixture.Mix well.

Mix Suran & Black Gram Mixtures very well. Add fresh bread crumbs, corn flour & chat masala, mix to make a dough like consistency. Make equal size balls.

Shape them into flat round kebabs. Heat a non-stick pan. Add oil & ghee. Shallow fry kebabs till crispy on both sides.

Sprinkle chat masala on the kebabs on both the sides. Serve kebabs with lachcha pyaaz & coriander-curd dip.

Coriander- curd dip : Take all the ingredients in a smaa mixer jar except for the curds & make a smooth paste. Now add curds & crush again. The curds should be little thick & not watery at all. Take the dip in a small bowl.

Kebaab Platter : Line the plate with kebaabs, put coriander & curd dip on it & a small dot of tomato ketchup. Put lachcha pyaaz in the plate. Serve these flavourful kebabs to your guests & loved ones & let them enjoy the festive days with great jubilance.
