Labor Day Weekend Ribs

Start the indirect smoker, I used just charcoal. Put the spices in a bowl and mix.

Get the margarine at room temperature. Wash and Pat dry the ribs and then remove the silver skin. Add the spice then coat the ribs to the two slabs of ribs.

Get the temperature above what you want. Add the ribs and get to the temperature of what you want.

Move the ribs to where the thickness of it is on the hottest part of the grill. You'll find out after the first hour after that. Move them around to where the thickness so as to cook evenly. As you're cooking them and moving the ribs switching place on the grill I never turned mine over, I kept the bone side down.

When the bones were starting to pull away i new the smoker had done the job I wanted. I smoked for about 3 hours total. Moved them 3 times. Then finished them in the oven on 350° Fahrenheit. When I moved to the oven I covered them with aluminum foil.
