Not another side dish! This potato salad is hearty (without being too heavy) with a good hit of spring onion and chives.

Not another side dish! This potato salad is hearty (without being too heavy) with a good hit of spring onion and chives.
Steps

Combine all sauce ingredients in a bowl. Mix well and set aside.

Place potato in a pot of cold, unsalted water. Bring to boil. Allow to boil until the potato is fork tender but still hold its shape. Approx. 7-8 mins. Drain and set aside.

Bring another pot of water to a boil. Gently place the eggs into boiling water to make hard-boiled eggs. Approx. 12 minutes. Run the eggs under cold water, peel, and roughly chop into small chunks.

Heat over oil in a large saucepan over medium heat. Cook the bacon until crispy around the edges. Approx 5 mins.

Stir in garlic and cook until lightly coloured. Approx. 1 min.

Put potato and butter into the saucepan. Gently stir everything together to coat everything in butter. Approx 30 seconds.

Stir in spring onion and chives. Immediately turn off the heat. Continue to gently stir all ingredients together to allow spring onion and chives to soften in the residual heat. Approx 30 seconds.

Mix in the eggs and the sauce. Give everything a finally stir. Season with salt and pepper to taste.
