Ingredients

Serves 1 serving
  1. 2 tablespoonsfish sauce (30 ml)
  2. 2 teaspoonsseasoning powder
  3. 2/3 cupcoconut milk (about 150 grams)
  4. 5 piecesboiled bamboo shoots
  5. 10 1/2 ounceschicken (about 300 grams)
  6. 1 bunchfresh Thai basil
  7. 10 1/2 ouncesred curry paste (about 300 grams)
  8. 1 cupwater (250 ml)

  1. 1

    Wash the vegetables and other ingredients. Slice the bamboo shoots and pick the basil leaves.

  2. 2

    Heat a pot over medium heat. Add the red curry paste and stir until fragrant, then add the chicken.

  3. 3

    Add the bamboo shoots and enough water to cover them.

  4. 4

    Season with seasoning powder and fish sauce.

  5. 5

    Stir until the chicken is cooked through. Add the coconut milk and basil leaves, then remove from heat and serve.
