Ingredients

25 minites
  • Kale
  • Light olive oil
  • Chinese 5 spice OR middle eastern spice blend (i.e. bahrat or ras el hanout)
  • Ground sea/rock salt
  • Soft brown sugar (if using 5 spice)

Steps

  1. 1

    Preheat the oven to 140C. Wash your kale leaves then dry them well (with kitchen towel).

  2. 2

    Pour a small bowl of olive oil. Roughly chop the leaves. Rub the leaves with a little oil and place on a large baking tray/s.

  3. 3

    Grind a good amount of salt over the leaves, then sprinkle your spice mix over the leaves (about 1/2 tsp per baking tray).

  4. 4

    Bake for 10 minutes, turn leaves, then bake for a further 8-10 minutes until crispy/dry.

  5. 5

    If using Chinese 5 spice then sprinkle over some soft brown sugar. Serve immediately.
