Red Sauce and Chickpea Flour Leftover Pasta Cutlets In Airfryer

Being a Nutritionist, I like to add proteins to all carb rich dishes, especially if they are vegetarian.This recipe is my innovation when I made excess pasta and it got mushy in the refrigerator overnight. So being a Desi , I added chickpea flour, cornflour, red sauce and spices and made delicious cutlets. As I don't like to use oil for frying, I baked them in Air fryer. They turned out super yummy 😋 Do try the recipe!

Red sauce recipe:
First, heat a pan and add olive oil. Saute garlic and onions till aromatic and translucent.

Then add chillies, tomatoes and cook till soft. Add some water to deglaze.

Then add spices, seasonings and herbs. Add tomato ketchup too.Mix well and cook for a minute. Add 1/4 to /1/2 cup water, cover and cook till oil separates. Then cool and blend to a smooth paste. Red sauce is ready.

To make Cutlets, take a deep bowl. Add leftover pasta, grated cheese and mash it till it is sticking to each other. Add 2 tablespoon red sauce and mix well.

Add all other mentioned ingredients and make a dough. Grease the fingers with oil and shape ball sized portions into cutlets.

Keep them in the fridge for 10 minutes. Till then, preheat the air fryer on 200 °c for 10 minutes.

Then brush the base of tray with oil. Take out the cutlets from refrigerator. Brush them with oil all over. Arrange on the baking tray.

Close the air fryer and bake for 20 minutes. Turn upside down after 10 minutes and brush with oil. After 20 minutes, take out from the air fryer.

Serve delicious Red sauce and chickpea flour leftover pasta cutlets piping hot with red sauce. Enjoy!
