In a bowl, mix goat cheese with spinach/shallot mixture. Add sun dried tomatoes and mix until evenly combined.

Place salmon filets in a baking dish. Cut slits down the middle and fill/top with goat cheese mixture

Bake at 425 for 20 minutes
