Add the eggs and rum in three batches, mixing until smooth each time.

Finally, sift in the flour and mix until smooth.

Evenly pour the batter into two cake pans lined with parchment paper, tapping to release air bubbles. (If using a 6-inch or two 4-inch pans, they will be almost full; I used a 5-inch pan, so it was about 70-80% full.) Place in a preheated oven at 450°F (230°C) on the middle rack and bake for 23-25 minutes. For a firmer center, bake for 30 minutes.
