Shahi Rice kheer with Saffron

Food, or rather desserts are an integral part of Indian Diwali celebrations. Friends get together and there are varieties of food, snacks and desserts.Shahi Rice Kheer is a sweet and delicious dessert .It is basically rice pudding which is prepared by boiling the rice in full cream milk. Some chopped dry fruits like almonds, pistachios, cashewnuts and saffron are added to make the kheer rich and creamy. Serve chilled.

Wash and soak the rice for 30 minutesa.Boil whole milk.Add the milk powder to the boiling milk.Next add the rice and stir. Simmer in low to medium flame till milk is reduced to half.Add cardamom powder and mix.

Stir the kheer every 5 minutes to ensure that milk doesn't stick to the base of the pan. Add sugar to taste.At this point stir the kheer often as milk thickens more.Add few saffron strands soaked in warm milk. Dilute 1 tsp cornflour in water and add it to the kheer to make it more creamy.Sprinkle rose water and roasted chopped dry fruits and stir.

Garnish with few chopped nuts and raisins. Cool and refrigerate. Serve chilled.
