Chorizo, potatoes, beans, courgette and cabbage

This simple, filling, one pan meal is a perfect way to use old leftover boiled potatoes. They will soak up the flavour from the chorizo, and taste amazing. Add a bit of beans and veggies and dinner is served.

Chop small onion, garlic, and courgette. Peel and cut chorizo into small pieces. Add a bit of oil to cook.

I used some leftover duck fat with duck stock, but any oil will do.

Cook until onion is soft, then add potatoes and beans and fennel seeds.

Once potatoes have soaked in the flavour, season with salt and pepper. Add the cabbage right in the end, as it cooks quickly.

Dinner is ready.
