Vegan Roughly-Chopped Soy Bean Hamburger

I roughly diced soy beans in a blender, and mixed them with some okara from handmade tofu that I wanted to use up.
Chunky okara gives it a nice texture and can be used as a substitute for ground meat. It can also be stored in the freezer.

It's convenient if you roughly chop plenty of boiled soy beans in a food processor, flatten them, and then store them in the freezer.
I used this amount of soy beans because they're packaged this way, the okara amount is based on how much leftover I have from making homemade tofu.
If you don't have oatmeal, use "fu" (dried wheat gluten), flour, or panko bread crumbs. For 2 servings. Recipe by goodaroro

Ingredients

  1. Hamburgers:
  2. 200 gramsSoy beans (boiled and roughly chopped)
  3. 2●Green peppers
  4. 1/2●Onion
  5. 1 clove●Garlic
  6. 1 piece●Ginger
  7. 1 tbsp◎Katakuriko
  8. 4 tbsp◎Oatmeal (or wheat gluten)
  9. 1 tbsp◎Olive oil
  10. 1◎Salt and pepper
  11. 1/2 tsp◎Nutmeg
  12. 1/2 tsp◎Sage
  13. 1 tsp◎Soup stock granules
  14. For the hamburger sauce:
  15. 3 tbspKetchup
  16. 3 tbspJapanese-style Worcestershire Sauce

Cooking Instructions

    Roughly chop the boiled soy beans, and finely mince the ● ingredients. If using a food processor, only use it in short bursts, taking care not to turn the soy beans into a paste.

    Combine the ◎ ingredients with Step 1 and form into paddies. Cook in a frying pan coated with a thin layer of olive oil. Cover with a lid and cook each side for 4 minutes. Do not touch them until they've browned.

    In the same frying pan, add the ketchup and Japanese-style Worcestershire sauce. Mix together and lightly heat, taking care not to burn it. Pour over the hamburger.

    Try eating this a la hamburger style with lettuce, tomato and mayonnaise between two buns. It's really delicious.
