Lemon Poppy Seed Scones

Lemon Poppy Seed Scones
Cooking Instructions
- 1
Adjust oven rack to MEDIUM position and preheat to 350°F convection (375 conventional). Prepare a baking dish by lining it with parchment paper.
- 2
In a food processor combine flour, sugar, poppy seeds, baking powder, and salt, and pulse to combine. Add butter and pulse until the mixture resembles a coarse meal.
- 3
In a separate bowl, combine egg, lemon juice and zest, and milk, and whisk to combine. Pour wet ingredients over dry ingredients and pulse until a dough forms, but take care to not over-mix.
- 4
On a lightly floured surface, pat dough into a 10- by 6 1/2-inch circle and cut into triangular scones.
- 5
Place scones on prepared baking dish and bake for 18 minutes, or until scones have browned.
- 6
Optional lemon glaze: while scones are baking, combine 1/3 cup confectioners sugar and a couple of tablespoons of fresh lemon juice until the desired consistency is reached; brush glaze on scones while still hot. Let cool and serve.

Fluffy Scones Fluffy Scones
I wanted to eat the scones and the clotted cream which I had in Afternoon Tea.You can mix the butter and flour with your hands, not with a food processor (about 3-5 minutes) If you don't have a small size egg, reduce the amount of milk a bit as the mixture becomes too soft. When cutting the shapes, cut gently so you don't crush the dough. If you can cut the sides cleanly, it will plump up well. When using heavy cream, reduce 10 g of butter. Recipe by AAlly cookpad.japan
