Ingredients

Serves 6 servings
  • 1/2 headgreen cabbage
  • 10 1/2 ozpork ribs (300 grams)
  • 5 clovesgarlic
  • 4 slicesginger
  • Seasonings:
  • 1 cupbonito soy sauce (about 240 ml)
  • 1/2 cupmirin (about 120 ml)
  • 1/2 cupwater (about 120 ml)

  1. 1

    Prepare the ingredients: cabbage, pork ribs, and seasonings.

    Cut the 1/2 head of cabbage in half to make two large pieces. Remove the core and rinse thoroughly under running water. Cut the pork ribs into pieces and blanch them in boiling water to remove blood and impurities.

    Pour the seasonings and water into the inner pot of an electric rice cooker. Add the pork ribs and cabbage in order. Place the garlic cloves and ginger slices into the pot as well. (Ginger helps balance the cooling nature of cabbage and reduces the pork’s gamey taste.)

    Bonito soy sauce adds a rich, delicious flavor. Add it directly to the ingredients for a quick and easy preparation.

    Add 1 cup of water to the outer pot of the rice cooker. Place the inner pot with the ingredients inside, cover tightly, and start cooking.

    When the switch pops up, turn all the ingredients over to soak in the sauce. Add another cup of water to the outer pot, cover tightly, and cook again.

    When the switch pops up again, let it sit with the lid on for 20 minutes, or leave it to rest until the next day.

    Serve the fragrant and delicious braised cabbage with pork ribs hot.

    Tips:
    * You can add some winter melon to cook together for a variation called braised winter melon, another tasty Hakka dish.
    * For a vegetarian version, simply omit the pork ribs and make braised cabbage.
