Easy to make, with a realistic lychee appearance, crispy outside and chewy inside.

Add black pepper and egg white to the shrimp paste. Stir clockwise until the mixture becomes sticky.

Wet your hands, take a small amount of the mixture, and roll into small balls.

Evenly coat each ball with crispy rice cereal, then gently press to secure the coating.

Heat oil to medium (about 325°F/165°C). Fry the balls over medium-low heat until they float to the surface, then remove.

Drain excess oil from the shrimp balls.

Garnish with a few leaves for decoration (you can use mandarin orange leaves).
