Amori and Cheese is all similar to the classic Mac and Cheese. It's just that I have used Pasta Amori this time as an innovative twist.
Amori are curled, ridged hollow tubes of Pasta that look like corkscrew Macaroni. This shaped Pasta originally comes from Southern Italy and are good choice for any sauce based dish. They are easily adaptable shaped Pasta suitable for almost all Pasta sauces.

It's a perfect classic- and it just happens to be in one pot . It would be easy to assume that I make this in one pot for convenience. But I swear that's really not the reason why. The reason I make this in one pot is because the starch released from the Pasta mixes in with the sauce and emulsifies it, creating a Cheese sauce that is silkier and clings better to the Pasta than making it the traditional way ( I.e. Pasta and sauce differently )

Not only is it made easily, it's done almost effortlessly. And you'll crave for more and more. The best part is that it can whipped up on any day sans any prior preparations. That's the beauty of this splendid one pot meal sufficient for the whole family. And you can tweak a bit with the actual recipe as well and add our favourites in it like any Herbs etc.

Ingredients

25-30 minutes
5-6 servings
  • 500 gmAmori Pasta
  • 3-4 tbspButter
  • 4 cupsMilk
  • 2 1/2 tbspAll-purpose Flour or Maida
  • 3 cupswater
  • 3 cupsCheeses
  • 1 tspSalt
  • 1 tspBlack Pepper
  • 1 tspdry Parsley
  • 1 tspGarlic powder
  • 1 tspOnion powder
  • 1/2 tspMustard powder

Steps

25-30 minutes
  1. 1

    Cook pasta al dente with a little of olive oil and salt. In the meantime, melt butter in a large or medium pot over medium heat. Add flour and cook for one minute.

    Add about 3/4th cup of Milk and mix into butter mixture - it will become a slurry pretty quickly. Add remaining milk and mix so the slurry mixes in. Then add water and seasonings (garlic powder, onion powder and mustard powder)

    Add pasta and mix. Stir occasionally as it comes to heat. When you see wisps of steam as you stir, lower the heat down to medium low. Stir regularly as it cooks for 9-10 minutes. It also bubbles gently, or until the sauce thickens and the pasta is just cooked - tender but still firm. It should be saucy at this stage and thinner as well.

    Easy Baked Mac n Cheese

    Take it off the heat and stir in the cheese quickly. Adjust salt and pepper to taste. Also in this step, the sauce thickens and reduces considerably. I like to use mozzarella and cheddar because I feel this combination tastes better. Serve immediately.
