Soup is said to be as old as the history of cooking. The word soup comes from French word 'Soupe' . Piping hot soups are heart warming, cozy and healthy and perfect in cold and rainy days.
Jowar is a grass species which is cultivated for its grain and scientific name of Jowar is Sorghum bicolour which belongs to the family Poaceae. Jowar is also known as durra, jowari, jonna, cholam, white millet, sorghum etc. This fiber rich millet is cultivated in India and globally - Australia, Africa, Asia and Central America. Jowar is native to Africa and was a part of regular diet across the globe for more than 5000 years. Jowar is loaded with protein, carbohydrates, dietary fibers which promotes growth. It is a good source of calcium, iron, phosphorus, potassium and sodium. It also contains vitamins thiamine, niacin, folate and riboflavin which are known to improve over all health. This millet is ideal for weight watcher and helps to regulates diabetes. Jowar is gluten free millet and that's why it is a healthier alternative for Maida (all purpose flour). Today, I have prepared Jowar soup along with vegetables.

Soak jowar overnight. Next day wash and pressure cook for 6-8 whistles by adding salt.

Heat ghee and add spring onion whites and sauté for few seconds then add carrots and broccoli, sauté for few minutes.

Then add 1/4 cup water and cook for couple of minutes.

Now add cooked jowar add about two cups of water.

Once it starts boiling add ginger and salt. Turn the flame low and let it simmer for 10 minutes.

While soup is simmering, dilute cornflour in one tbsp water and add into the soup. Mix well. Lastly add spring onion greens and turn off the heat after one minutes.

Serve hot.

Note:
1. You can add your choice of veggies.
2. You can skip adding cornflour or you can increase the quantity of cornflour if you like your soup thick.
3. You can lightly grind cooked jowar.
