Ingredients

30 minutes
Serves 3 servings
  1. 1/4onion
  2. 1 cupcooked beans
  3. Water or chicken broth
  4. 1garlic clove
  5. Oil
  6. 3.5 ozvermicelli noodles (about 100 grams)
  7. 1dried guajillo chili, seeded

Steps

30 minutes
  1. 1

    Fry the vermicelli noodles in oil until golden brown.

  2. 2

    Set the noodles aside, then sauté the onion, garlic, and chili. Add the beans. You can also add chorizo at this step if you like.

  3. 3

    Once sautéed, blend the mixture until smooth.

  4. 4

    Return the mixture to the pan and add water or chicken broth to your desired consistency.

  5. 5

    Over medium heat, add the vermicelli noodles and cook for 12 minutes. Season with salt and pepper to taste.

  6. 6

    To serve, top with diced panela cheese, sour cream, and avocado.
