This is an authentic field dish from the Pyrenees mountains brought here by Hungarian and Basque shepherds tending sheep in our California Mountains. It is made from the most nourishing parts of the lamb for a hearty single meal at the end of a long day. Ingredients

  1. 1lamb liver
  2. 1 slicecured bacon
  3. 1 cupwater or wine
  4. 1potato, skin on
  5. 1red onion
  6. 1red sweet paprika, California Wonder are best for goulash
  7. 1green spicy pepper, Poblano are best for goulash
  8. 1Carrot
  9. 1cabbage leaf
  10. 1Garlic bulb
  11. 1bay leaf
  12. Equipment: cast iron dutch oven with lid
  13. Cost: lamb liver $4 a pound, cured bacon 50 cents, other ingredients $1.50, per person $3

    Melt cured bacon in dutch oven over medium heat, brown the diced liver, add cup of wine or water and all other ingredients, mix well, lid on, cook till tender, about an hour.

    Taste potato. When done, serve big portion of goulash garnished with chives and cilantro. Dunk sour dough bread in the goulash sauce to clean your plate.

My grandparents and parents taught me growing, cooking and preserving home grown fruits and vegetables, eggs, meats and fish. I got certified by the University of California Master Gardener Program in 2005. I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste.
