Lebanese Chicken Lentil Soup

Heat a large pot over medium-high heat and add the Olive Oil. Fry the Onions until caramelized in color.

Add in the Lentils, Sweet Potato, Rice, Cumin and Black Pepper. Mix and sauté for a couple of minutes then add in the Chicken Stock, Water and Salt. Cook uncovered for 40 minutes.

Season each Chicken breast with Salt, Pepper and Baharat. Grill Chicken breasts in a little Olive Oil in batches. Set aside to rest. 5 Minutes after the last Chicken is cooked, slice the Chicken breasts.

Add in the Chicken (with all the cooking juices), Parsley and Lemon Juice. Cook covered for another 10 minutes
