Ingredients

  1. 30 mlOlive Oil
  2. 2Onions, peeled and diced
  3. 375 mldry red Lentils
  4. 1large Sweet Potato, julienned
  5. 90 mlJasmine Rice, uncooked
  6. 2,5 mlground Cumin
  7. 5 mlfreshly ground Black Pepper
  8. 1000 mlChicken Stock
  9. 1000 mlboiling Water
  10. 5 mlSalt, or to taste
  11. 1 kgChicken, skinned, deboned breasts
  12. 2,5 mlSalt
  13. 2,5 mlBlack Pepper
  14. 2,5 mlBaharat
  15. 15 mlOlive Oil
  16. 60 mlLemon Juice
  17. 15 mldried Parsley

Steps

  1. 1

    Heat a large pot over medium-high heat and add the Olive Oil. Fry the Onions until caramelized in color.

    Add in the Lentils, Sweet Potato, Rice, Cumin and Black Pepper. Mix and sauté for a couple of minutes then add in the Chicken Stock, Water and Salt. Cook uncovered for 40 minutes.

    Season each Chicken breast with Salt, Pepper and Baharat. Grill Chicken breasts in a little Olive Oil in batches. Set aside to rest. 5 Minutes after the last Chicken is cooked, slice the Chicken breasts.

    Add in the Chicken (with all the cooking juices), Parsley and Lemon Juice. Cook covered for another 10 minutes
