Ingredients

  • 2 tablespoonsGenovese pesto (about 30 grams)
  • 1 tablespoongrated Parmesan cheese (about 8 grams)
  • 2 slicesbutter (about 2 tablespoons or 28 grams)
  • 1/2small shallot, finely chopped
  • Chopped fresh basil, to taste
  • as neededVegetable broth,
  • 1/2 cupArborio rice (about 90 grams)
  • 3 tablespoonsdry white wine (about 50 ml)

Steps

30 minutes
  1. 1

    Melt one slice of butter in a pan and sauté the chopped shallot until soft. Add the rice and toast for a few minutes, then pour in the white wine and let it evaporate.

    Cook the rice by gradually adding strained vegetable broth, stirring often.

    When the rice is cooked, stir in the Parmesan cheese, the remaining butter, and chopped basil.
