Egg hakka noodles

Bring 6 to 8 cups of water to a rabit boil.. add noodles and cook till al dente.. follow the instructions on the pack for cook time...

Drain them to a colander and rinse under running water to remove excess starch... Add 1tsp oil to the noodles and smear it well to prevent them from turning sticky...

In a small bowl combine the soy sauce, oyster sauce, Red chili sauce, vinegar, 1tsp oil mix and set it aside...

Set a frying pan on the stove and set the stove to medium high heat.. add garlic, white spring onion saute well.. then add onion carrot stir fry 2 to 3 minutes..

Then add Bell pepper, cabbage fry them just for 2 minutes until a nice aroma comes out... The veggies should remain crunchy so do not over cook...

In a kadai Break it into three eggs and add some salt and fry well

Now veggies are cooked add noodles, mixed sauce, Salt, pepper, eggs, spring onion toss it well.. taste and adjust the sauce and salt at this stage...

Now ready to serve...
