Ingredients

Serves 3–4 servings
  • Any leftover vegetables you have in the fridge, such as daikon radish, carrot, onion, burdock root, napa cabbage, fried tofu, tofu, shimeji mushrooms, etc
  • 3 3/4 cupsdashi made from bonito and kelp (900 ml)
  • 1/2 clovegarlic, thinly sliced or minced
  • 2 tablespoonssake
  • 1/2 tablespoonmirin
  • 3 tablespoonslight soy sauce
  • 1 teaspoonsalt
  • 1little toasted sesame oil
  • 1little chopped green onion

Steps

  1. 1

    Prep: Cut the vegetables and other ingredients into bite-sized pieces. Make a slightly strong dashi using bonito and kelp. If using fried tofu, pour boiling water over it to remove excess oil.

    Heat sesame oil in a pot and lightly sauté the vegetables (just enough to coat them with oil). If using fried tofu or tofu, add them after the dashi comes to a boil.

  3. 3

    Add the dashi and garlic to the pot from step 2. When it comes to a boil, add the tofu or fried tofu and let it simmer. Add the seasonings marked with ● and adjust the flavor to your liking. Depending on the vegetables you use, the soup may become sweeter, so feel free to adjust the seasonings.

    Once the ingredients are well flavored, serve in bowls and top generously with chopped green onion.

    Tip: For a different flavor, try adding yuzu kosho if you like!
