You can make a tender and juicy prime rib that doesn't even require a knife. This method also works well for roast beef.

Take the meat out of the refrigerator at least 1 hour before cooking to bring it to room temperature.

Mix the salt, pepper, and garlic powder, and rub it all over the meat. Preheat the oven to 375°F (190°C).

Place the meat in a roasting pan with the fat side up (if using a standing rib roast, place it bone side down) and put it in the oven.

After 1 hour, turn off the oven and let the meat continue to cook in the residual heat for 2 hours without opening the oven.

About 45 minutes before serving, turn the oven back on to 375°F and warm the meat for 30 minutes.

Remove the meat from the oven and let it rest for 15 minutes before slicing.
