Hummingbird Cake with Cream Cheese Frosting

Cooking Instructions

Combine first 5 ingredients in large bowl. Add eggs & oil. Stir until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 cup pecans, & bananas.

Pour into greased 13x9 pan. Bake in 350 degrees oven for 38 minutes or until toothpick inserted in center comes out clean. Can put in 3 greased & floured 9 inch cake pans, but only bake for 23-28 minutes.

Let cool completely before frosting.

For frosting: cream butter & cream cheese together. Gradually add powdered sugar. Beat until light & fluffy. Stir in vanilla. Spread over top of cake. If doing layers, spread between layers, up sides, & over top.

Sprinkle top with 1/2 cup chopped pecans.

Mother’s Day is coming up—what better way to celebrate than with this delicious cake!In Spain, we celebrate it on the first Sunday of May, and here in the U.S., it’s the second Sunday. I couldn’t be with my mom this year, but of course I made sure to wish her a happy day—she’s the best in my eyes! ❤️This was actually my first time making a cream cheese frosting, and honestly, it was super easy and turned out amazing. The cake itself is a basic sponge that I brushed with a lemon syrup to keep it soft and moist. I filled it with my favorite strawberry jam—it’s from the French brand “Bonne Maman”—and topped it with fresh berries and a little bit of licorice for fun!Sorry I don’t have a prettier photo of this cake—I made it for a coworker’s birthday and snapped the pic right before heading out in the morning, right after I finished decorating it so everything would be fresh and in place!Want the recipe?
