Ingredients

  • 2 lbpork belly or fatty stew meat, cut into chunks
  • 1/4 cupdark soy sauce
  • 1/4 cupnormal soy sauce
  • 2 teaspoonssugar
  • 3 tbspChinese cooking wine
  • 3-4star anise
  • 2.5 cupwater
  • 4-5 slicesginger
  • 6 clovesgarlic, sliced
  • 1/2 tbspChinese zechuan cloves
  • 1bay leaf
  • 2whole dried red pepper
  • 1/2large Daikon diced
  • 3small Potatos diced
  • 3Carrots, diced

Steps

  1. 1

    Turn on Sauté setting to sear both sides of each pork belly slice (roughly 2 min per side)

  2. 2

    Add ginger and garlic and keep sauteing in the rendered fat for 1 minute.

  3. 3

    Transfer all ingredients except the vegetables to pressure cooker. And cook on stew setting (17 mins)

  4. 4

    Quick release, open lid, and add in all vegetables. Again cook on stew setting or manual for 17 mins

  5. 5

Just made this. Over the top deliciously divine! I had to substitute a couple of ingredients due to what I had on hand.....regular soy sauce, a bit of Chinese 5 ingredient spice, and Marsala wine and Mirin instead of Chinese cooking wine. I'm still amazed at how scrumptious it turned out. And soooo easy. I had no potatoes so I served it over fluffy white rice.
