Origin of this recipe
I was inspired by Amanojako's miso soup with komatsuna and ginger, and I thought miso soup with komatsuna would be great. I combined it with enoki mushrooms, which I was researching for their umami. I couldn't find a simple recipe when I searched, so I created this one.

I was inspired by Amanojako's miso soup with komatsuna and ginger, and I thought miso soup with komatsuna would be great. I combined it with enoki mushrooms, which I was researching for their umami. I couldn't find a simple recipe when I searched, so I created this one.
Cooking Instructions

Cut the enoki mushrooms into 1-inch pieces for easy eating. Also, cut the komatsuna into 1-inch pieces.

Add the enoki mushrooms to the dashi stock and simmer for a bit.

Add the komatsuna starting with the stems and simmer for about 1 minute.

Turn off the heat and dissolve the miso.
