Cooking Instructions
- 1
Microwave the garlic for 5-10 seconds like this. Keep the garlic raw, but microwave it until it gets warm.
- 2
Once microwaved a bit, the garlic peels easily.
- 3
After peeling, process the garlic, salt (to taste), and salad oil (to taste) in a food processor.
- 4
If you stop here, it will be minced.
You can store it in this state if you prefer. - 5
Process a bit more in the food processor to make it into a paste.
- 6
Then, flatten it in a Ziploc bag, store the portion you will use soon in the refrigerator, and the rest in the freezer.
- 7
If it's about 1/8 inch thick, you can break off pieces easily by hand from the freezer.
- 8
# You can use olive oil or grapeseed oil, or any oil you like. However, a neutral oil is more versatile for any dish.

Always keep a jar in the fridge. The garlic skins and cores are pulverized in the food processor and sprinkled like granulated garlic. No waste. Our garlic confit is adapted from a recipe from the famous greek chef Michael Psilakis, without the salt. We dont add salt to oil, we add salt after frying, salt makes oils rancid. There is a concern that garlic in oil can cause botulism. According to university research, when heated at least 15 minutes at 251 F degrees, botulism is killed. So we cook at 251F degrees in a mixture of olive and canola oil. We also keep ours in the freezer. Our garlic puree is made in an instant from confit garlic cloves and flaked seasalt with a mortar and pestle, a garlic press, or a mallet, or lay the side of a knife on top and press.
