Cooking Instructions
- 1
Cut the sweet potato into chunks and soak in water.
- 2
Microwave at 500W for about 3 minutes. (I use a Lekue steamer. Adjust if using a bowl & plastic wrap!)
- 3
Put the sweet potato and ★ ingredients in a pot, cover, and simmer on low heat until the flavors meld. Stir occasionally!

On 2011.10.4, I updated the photo and added some details to the steps.

Non-Fried Daigaku Imo Sweet Potatoes Non-Fried Daigaku Imo Sweet Potatoes
I love daigaku imo, so I wanted to make my own version of what I buy at the grocery store. When making it, I didn't want to fry, so I used olive oil and tried various methods until I was satisfied with the result! If you slice the sweet potatoes too thickly, it takes a long time for it to cook all the way through, so I recommend you cut them long and thin. In Step 4, be careful to not let the potatoes fall apart or burn. Recipe by Ri-karu cookpad.japan
