Cooking Instructions
- 1
Finely chop the cabbage, sprinkle with salt, and let it sit until it releases moisture.
- 2
Combine all the dumpling filling seasonings in a bowl and mix well (make sure to dissolve the soup base paste).
- 3
Add the ground pork to the bowl and mix thoroughly until the mixture becomes sticky.
- 4
Squeeze the excess moisture from the cabbage using a paper towel, then add it to the pork mixture. Mix well and divide into 10 portions.
- 5
Lay out the dumpling wrappers, overlapping them by about one-third. Place a portion of the filling in a long strip along the wrappers (refer to photos if available), and moisten the top edge of the wrappers with water.
- 6
Fold the wrappers in half lengthwise, pressing the edges together with your fingers to seal.
- 7
Starting from one end, roll up the dumpling. Moisten the end with water to seal (it should look like a rose!).
- 8
Repeat steps 5–7 to make 10 dumplings.
- 9
Lightly oil a skillet (or frying pan) and line the bottom with mizuna cut into 3/4-inch (2 cm) pieces.
- 10
Arrange the dumplings on top of the greens, drizzle with water, cover, and cook. Once boiling, reduce to low heat and steam for about 5 minutes.
- 11
Serve directly in the skillet, or transfer to a plate if using a frying pan.

Shrimp and Pork Filled Chinese Chive Dumplings Shrimp and Pork Filled Chinese Chive Dumplings
I was inspired by the Chinese chive buns that I had at a restaurant. I sort of made it up, and the results were delicious. See"Ultra-easy Gyoza Dumpling Skins" for instructions on making the skins. These dumplings are packed with filling. The skins will stretch a lot and you'll wonder "what if it won't hold the filling?" but they will. The dumplings will puff up when they are steam-fried so leave some space in between them. Finally, be very careful not to poke a hole in the dumplings when you turn them over (or the juice will escape!) Recipe by Setsubunhijiki cookpad.japan -
Chicken Dumplings with Steamed Vegetables Chicken Dumplings with Steamed Vegetables
I wanted to eat soft and plump chicken dumplings. When you heat ground chicken, the flavour decreases, so add some chicken stock to compensate. Also, when you boil it, the soup flavour weakens, so it is best to steam it to preserve the flavours and make the dumplings soft and plump. Placing the dumplings on cabbage prevents them from browning. Recipe by nin cookpad.japan -

Juicy Cabbage Gyoza Dumplings (Lightly Seasoned) Juicy Cabbage Gyoza Dumplings (Lightly Seasoned)
I've seen gyoza dumpling filling recipes with miso, green onion, ginger and so on, but I was never quite happy with the change in flavor and fragrance. I wanted to make simple, pure cabbage gyoza dumplings... Chinese cabbage is sweeter, but it doesn't suit me. It took me 4 years to get to this recipe. But... I'm still not totally satisfied. I'm really into searching for the perfect gyoza filling formula. We make about 100 large gyoza dumplings at a time in our family, but the 4 of us eat them all up.Attention: These dumplings are lightly flavored.1. Decide on the amount of sesame oil used depending on the color of the ground pork. If it's white, use less... adjust depending on if you want the flavor to be richer or lighter.2. Make sure to crush the garlic before adding it. The fragrance is totally different. If you keep the cooking liquid after making nibuta (simmered pork), you'll have lard. If you add this lard to your filling, it will be even richer. Adjust the amount of sesame oil if you add lard. For 125 dumplings (or 100 large size ones). Recipe by Nyanyadeko cookpad.japan
