Ingredients

Makes 10 dumplings
  1. 4.2 oz (120 g)ground pork
  2. 2 leavescabbage
  3. 1/2 teaspoonsalt (for cabbage)
  4. 30dumpling wrappers
  5. 1 bunchmizuna (or your favorite leafy greens)
  6. Seasonings for dumpling filling
  7. 1/2 teaspoonChinese soup base paste (such as Chinese chicken bouillon or soup base)
  8. 1/2 teaspoontoasted sesame oil
  9. 1/2 tablespoonsoy sauce
  10. 1/2 tablespoonsake (or dry cooking wine)
  11. 2 tablespoonswater
  12. For cooking the dumplings
  13. 1 tablespoonwater

Cooking Instructions

    Finely chop the cabbage, sprinkle with salt, and let it sit until it releases moisture.

    Combine all the dumpling filling seasonings in a bowl and mix well (make sure to dissolve the soup base paste).

    Add the ground pork to the bowl and mix thoroughly until the mixture becomes sticky.

    Squeeze the excess moisture from the cabbage using a paper towel, then add it to the pork mixture. Mix well and divide into 10 portions.

    Lay out the dumpling wrappers, overlapping them by about one-third. Place a portion of the filling in a long strip along the wrappers (refer to photos if available), and moisten the top edge of the wrappers with water.

    Fold the wrappers in half lengthwise, pressing the edges together with your fingers to seal.

    Starting from one end, roll up the dumpling. Moisten the end with water to seal (it should look like a rose!).

    Repeat steps 5–7 to make 10 dumplings.

    Lightly oil a skillet (or frying pan) and line the bottom with mizuna cut into 3/4-inch (2 cm) pieces.

    Arrange the dumplings on top of the greens, drizzle with water, cover, and cook. Once boiling, reduce to low heat and steam for about 5 minutes.

    Serve directly in the skillet, or transfer to a plate if using a frying pan.
